Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

It's the fact that you eat a lot more wheat than coffee that makes it more work, isn't it? Grinding a couple of teaspoons of coffee occasionally is pretty easy and not very time-consuming, while grinding pounds of flour to make bread takes a lot more time and energy. And, baking your own bread is a...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

I'm sure that buying grains and grinding them yourself is the best way to do that, but it is a lot more work. I used to think it was "more work" but it's really no different than grinding your own coffee. It's kind of funny to think that people pay more attention to their coffee than their wheat—de...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

Btw, on iron. In 2012, the NYTimes touched on the little known issues with iron overload that is starting to be noticed by researchers. NYTimes: A Host of Ills When Iron’s Out of Balance It didn't go into any detail, but if you like Kresser, he had an amazing presentation on the research covering ir...

Re: Permanent cookware

Dammit gumby, now you have me bidding on Copco cookware on eBay. Sorry. :) It seems that there are maybe a dozen or so different quality manufacturers that cropped up during that post-mid-century era that all have good products. Some of the brands are mentioned in this post: http://www.castironcoll...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

So if I got a roller mill and used it on a coarse setting, I'd be milling grain to a larger size and emulating the older stone mill? I dunno. I haven't researched mills yet (because I have access to a local old-fashioned grist mill). But I suspect that you'd be in good shape, if for no other reason...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

The question about freshness is interesting to me as well, given how long flour probably spends in transit and on shelves before we buy it.  I hope that the healthier stone ground stuff with all of the elements isn't going rancid - Gumby? Grist mill flour usually has a milled date on it. Some claim...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

What's all this about roller milling vs stone milling? One of the articles you recommended implied that roller milling is somehow different and inferior from more old fashioned milling techniques. I found a local bakery whose owners mill their own flour using a stone mill. Should I be worried about...

Re: Permanent cookware

I think the interesting idea here is that bloodletting was a common practice in every single major culture—ever since societies were formed and possibly earlier than that. The practice only fell out of favor roughly 150 years ago.... Actually, periodic bloodletting is still a standard treatment tod...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

I got some high-quality King Arthur Flour 100% whole wheat flour and gave it a whirl today.  Making good whole wheat bread is a lot harder than making white bread so far. Definitely gonna be a learning curve. The best I can say is that it was hearty. :) Knowing more about the subject now I also hav...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

Gumby, So what do you think of ketosis?  Is it beneficial to go into it once in a while?  Are the claims about brain health and keto valid?  Thanks again. Ketosis is beneficial to do once in awhile—as in intermittent fasting. You go into ketosis any time you don't eat for awhile (overnight, for ins...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

Just listened to a podcast with David Perlmutter, author of "Grain Brain" on.  I'd love to see a source that can dissect and counter his sources/analysis. Kresser took down Grain Brain a long time ago . Dementia and Alzheimer’s has now been linked to, among other things, the accumulation of iron in...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

Gumby, can you please provide some proof that iron overload is linked to diabetes and any proposed methods to revers/mitigate the damage? Thanks! Reub, the link between iron and metabolic disorders, including diabetes, has been known for decades. I'm afraid I don't have time to "prove" it to you, b...

Re: Permanent cookware

I did find out that the Copco Denmark pots/pans are highly coveted . They cooked amazingly well, though the instructions say you can only use low heat. However, my vintage Copco pans—which were purchased in the 70s and have never been used—gave off faint fumes that made me a bit lightheaded the firs...

Re: Permanent cookware

I recently learned that that's the origin of the red and white striped barbershop poles - they used to hang bloody rags from their poles. I think that's probably somewhat of an exaggeration. Wikipedia highlights that legend with a "dubious" warning: Wikipedia: Barber's Pole The origin of the red an...

Re: Permanent cookware

Many ancient cultures used copper for their water vessels because copper has antimicrobial properties. It was said to have purified their water after a few hours—something that various metals can do. Silver vessels had similar antimicrobial properties. https://en.wikipedia.org/wiki/Antimicrobial_pro...

Oh my god, Gumby.  That is is beautiful. I would switch from raw to cooking my eggs with those pans - even if they gave me cancer. Yeah.. I'm kinda sad I left them in the draw this long. I just dusted them off this evening and cooked some sweet italian sausage in the bigger one. The white porcelain...

But remineralization relies on fluoride. I don't believe that's true. It may be that fluoride can help with remineralization, but there are many examples of primitive cultures all over the world that had perfect teeth and virtually no cavities from vitamin-rich and mineral-rich diets alone. It's no...

Re: Permanent cookware

I will also say that bound iron does not apparently do damage in the body. It's the free iron that's the problem. When the iron is stripped or released from its binding compound, that's when the problems happen. A healthy body makes ferritin to bind free iron (why temporarily rising ferritin levels ...

I am not a strict adherent to any style of eating, and won't argue against what you've put out there; I'm just telling what worked for me.  I can certainly see that the refining of grains and vegetable oils could certainly have a larger impact  to American problems than the absolute # of carbs inge...

I would also point out that according to FAOSTAT, the french consume 30% to 40% more wheat than Americans do (their wheat is protected by purity laws) and they do not have the widespread chronic diseases we see here in America. Pakistan consumes 70% of their calories from modern wheat (Source: FAOST...

But it is, at this point, pretty well defined science that excessive carbs through the standard American diet, sugar, pastas, breads, etc. is the overwhelming leading cause of diabetes, obesity, and probably the root of many other diseases. Not true at all. See the Pritikin Diet or the Kempner Diet...

Also, I don't want to give the impression that I don't eat steak. I do! I just don't eat a ton and I eat it with traditions (see a French cookbook for traditional sauce pairings and side dishes that are meant to bring balance to the meal by incorporating other whole foods). Your tastebuds are there ...
