I think coconut flour doesn’t have the silky goodness of gluten. Probably better suited to cookies, although there are coconut flour pancake recipes online marked ‘keto & lo-carb.’ Maybe that’s something you’d like.

I’ll get some run of the mill (literally) flour for my experiment.

About $1.48/fl oz today, and 20% less 5 years ago. There was plenty of far cheaper stuff...with reviews mentioning mold, long past expiration dates, misleading product info etc.

Yes you can use coconut flour. Just reduce the amount to around 25% of equivalent almond flour or your pancakes will be gritty. The result will be very eggy, which I don't mind.

A great alternative is cashews, if you don't mind a bit extra in the carb department. Here's my favorite paleo pancake recipe:

Blend in a vitamix:
1 cup raw cashews
3 large eggs
2 Tbsp coconut milk powder and 3/4 cup water
OR, half can coconut milk + 1/4 cup water or to desired consistency

Then add:
3 Tbsp melted coconut oil
1 Tbsp maple syrup
3 Tbps coconut flour
1 tsp baking powder
pinch of salt

and blend to mix.

Alternative to maple syrup: melt some butter, add frozen berries and some sweetener (eg Swerve), and make into a sauce. Yummy. Even yummier if you add some lime juice.

Alternative 2: mascarpone cream. It's naturally sweet but has almost no sugar content. Goes great with berries, almost like an English cream tea sort of topping.

Dang, now I'm hungry.....

Made my own ricotta cheese tonight for the first time. Super-easy, and it turned out great.

- 1 gallon whole milk
- 2 cups heavy whipping cream
- 1 teaspoon citric acid
- 2 teaspoons salt

Put the milk, cream, citric acid, and half of the salt in a pot and stir gently for a minute to combine the ingredients. Apply low-medium heat.

When you see curds starting to form on the surface (about 140-150 degrees F), scrape the bottom of the pot once with a spatula to avoid scalding. No more stirring or scraping after that.

When you see the whey start to “erupt” through the curds like a lava flow (about 185-200 degrees F), immediately remove the pot from heat, cover it, and let it sit for 20-30 minutes.

Use a fine-mesh strainer to drain the curds for a few minutes, gently stirring as the whey drips out. Stir in the remaining salt to taste (you may not need the entire remaining 1 teaspoon).

Makes about 2 or 3 cups of cheese. You can use it immediately, refrigerate it for up to 7-10 days, or freeze it.

This one is pretty good:

2.5lb ground beef
5 potatoes
1 onion
1 can cream of chicken
Shredded cheese
S+P

1. Brown beef and set aside.
2. Chop up potatoes (kinda small)
3. Chop up onion (same size as potatoes
4. Layer casserole dish with each layer. Put salt and pepper on each layer. Then put the cream of chicken on top and kinda smoosh it in there.
5. Bake at 375 for 60-80 minutes
6. Turn off oven, throw on as much cheese as you can handle, then put it back in the oven for 10 minutes.

I'm gonna try this with a few other kinds of spices and see how fucking awesome it gets. You could probably also substitute turnips for potatoes and bake it in less time.
